raspberry lemon pancakes

Lemon Raspberry Pancakes

After a week traveling between San Francisco, Monterey, and Big Sur, we are back home in Austin! The California coast line is absolutely beautiful, but of course it's always good to be home. I actually teared up when I dropped the dogs off to be boarded so you can imagine how excited I was to see them all when we got back. Here are a few of my favorite pics from the trip: It's always hard to go back to work after a vacation, so these fluffy lemon raspberry pancakes were my weekend pick-me... Continue Reading
Chipotle Sweet Potato Enchiladas

Chipotle Sweet Potato Enchiladas

I’m writing this post from a tiny wood cabin in the middle of Big Sur, California. We spent the weekend in San Francisco and left this morning to drive down the stunning Pacific Coast Highway. The next 2 days will consist of hiking, camp fires, sleeping under the redwood trees, and no cell service…it’s nice to feel a little disconnected once in a while. I’ll post a few pictures of our trip next week on the blog and on Instagram later this week! These chipotle sweet potato ... Continue Reading
Chipotle Enchilada Sauce

Homemade Chipotle Enchilada Sauce

First comes the enchilada sauce, next week comes the...enchiladas! I only recently realized how easy it is to make enchilada sauce at home. You can find canned chipotle peppers in any grocery store - they come packed in adobo sauce and are usually located near the salsa and canned enchilada sauce. You can adjust ... Continue Reading

Orange Cranberry Muffins with Zucchini

I pretty much wake up starving every morning. I wish I could blame that on the baby growing inside me, but it’s been the case since well before that. I’ve been in a breakfast muffin kick over the past month or so. Muffins are filling, sweet, and just satisfyingly carb-y. I could eat them at any time of the day, but it’s been for breakfast with coffee lately. We had a pretty hectic weekend that included 3 trips to Home Depot and patching a 4 inch square hole in the wall... Continue Reading
Garden Quinoa Salad Bowl

Garden Quinoa Salad with Lemon Basil Vinaigrette

This is my much anticipated (by me, at least!) first post as a food blogger! I've spent years reading other peoples' food blogs and am excited to share some of my own original recipes in addition to my twists on existing recipes. I first made this salad for a friend's baby shower...the request was for a vegetable-heavy side salad without leafy greens. I had been wanting to go by the farmer's market for a while, and this seemed like the perfect excuse. Even though it can ... Continue Reading
